Happy (Belated) Holiday/Christmas!

Happy belated Christmas, Hanukkah, Kwanzaa  Christmakah, etc    veggie eaters, food lovers, and all around sexy crews!~

Christmas ever started with a complete lack of sleep and a meek attempt at dehydrating tomatoes...which took over 12 hours!! But first...my oven got tickled hardcore this time around. I had a Christmas/Holiday party to share with a lovely group of buddies and we played a sort-of Yankee Swap/Secret Santa type of deal. I made up funky money banana bread~ chocolate chips, cinnamon, ginger, cranberries, raisins  walnut, pecans, coconut~ everything was whole wheat, organic, and I slipped in vitamin B12 drops, vitamin C drops, etc... I got a bit too excited.

The next day was the day before Christmas Eve, and I had a lot of dehydrating and baking to do. But I got pretty awful and heartbreaking news...so I lazed up. I had planned on baking four cakes, dehydrating tomatoes, and making a peppermint brittle. These buggers owned my oven...for about half a day!

Christmas eve rolled up and thanks to tomatoes, cake baking happened all day Christmas eve. I spent this Christmas eve with the ever talented and wonderful Scotty Soul...where the plan was chill, make dinner, exchange gifts, listening to silly Holiday tunes, and watching far too many Christmas movies...
I didn't get a picture of the yummy dinner we made but I'll gloat a bit. We stocked up on two massive bags of veggies and spices and made a big and beautiful pot of veggie soup.
     Menu~ Scotty Soul's favorite...Soup and toast!

The recipe is a bit all over the place, but here's a gist:
What We Used:

  1. 1 med-large onion, chopped
  2. 2 medium sweet potatoes chopped
  3. 1 pint of cherry tomatoes, or 0.66 Kg of tomatoes chopped
  4. 1 large carrot, chopped
  5. 2 small head of baby napa cabbage, chopped
  6. 4 leaves of dinosaur kale, chopped
  7. 3 leaves of chard, chopped
  8. bag of enoke mushrooms, chopped
  9. 1/2 medium zucchini, chopped into half moons
  10. 1-2 T olive oil
  11. 1 T garlic minced
  12. 1-3 T black pepper
  13. 1 t salt
  14. 1 T Chinese pepper
  15. 1 T mixed herbs
What we Did:
  1. heat a medium/large pot to medium high heat, add the oil
  2. When the oil is hot, add the onions and sweet potatoes~ set to low heat and watch
  3. After you can smell the sweetness, add the chopped tomatoes *Let this Stew and boil down to make a broth of sorts*
  4. Add carrots and garlic.
  5. After 10 minutes, add everything else and let boil down to desired thickness!
~Toast optional~

Vegan Beatin' in the Philippines, day 2: Jeepney Joyride to Port Barton

Classic public transportation falls into the groups of buses, trains, cars, bikes, horseback, motorcycles, what have you. I'm used to the webs of Seoul subways, cabs, and buses...stateside, I called to legs and bikes, the Philippines, there are motorbikes and jeepneys!
Jeepneys are jeeps on steroids...they resemble school buses and make such a jarring noise, they announce their oncoming presence! People are piled into these guys, literally piled!
Day dos was a mission to Port Barton, we wanted beaches and we were getting to them...there's a jeepney that barrels to Port Barton for about 250p (6,690 원 or $7)!! The bus station is called "San Jose station." It is home to my first public restroom Filipino style...I nearly vomited. This is a short video pre-bathroom story~
First, there is a charge to use the bathroom, about 20p (535원 or $0.47 USD), there is no toilet paper, no toilet covers, and no flush. The bathroom is covered in an ashy sticky dust that's painted like a Pollack in sweaty water; and outside the crooked metal stalls are giant trash barrels full of water. There are no hanging hooks in the bathroom; balancing my purse on my knees while clutching onto toilet paper and crouching strategically over the bowl and avoiding a potentially fatal fall was my main point of focus... What makes this situation even more uncomfortable is...my body had a calling. (aiii digestion) and being Korean, balancing acts over toilet bowls isn't too difficult but I was dealing with a no flush and body-demand situation. I started to hear laughter and more footsteps brazing with the floor. My heartbeat started to pound in my ears and I was sweating profusely at this point, nerves, heat....
literally how will I deal with this shit.
So I stood...trying to figure out what to do. I checked out the plumbing mechanics, no help there and after about five minutes of standing in the stall, I hear the women next to me leave her stall (what no flush!) and take a bucket of water out of the trash barrels right outside her stall and manually deal. Aha~ at this point, there was a party in the candy-coated bathroom...I was the only foreigner, feeling like a dog with a tail between it's legs, I poured a couple buckets, washed my hands and ran. aiiii~
The guesstimate of our jeepney mission is that after a 4 hour drive, we'd be sipping cocktails and basking in the gloriously sunny and salty scented-beaches.
photo taken by VeganBeats
There were a few stops and more people would nuzzle up together. I saw a lot of painfully adorable kids snuggling up to their parents and grandparents...how did these people rock jeans, crammed jeepneys, AND  a warm snugly kid on their laps?!
lovey snuggles~ photo taken by VeganBeats
Two hours in we made a bathroom/food/beer pit stop. I used the second grossest bathroom and felt like a pro, I knew what to do... The pit stop stores were caked in dust, left pricetag-less, but still offering some potentially sustainable calories. First though, I played with a mangled kitten...these animals, ai they all need love. I was getting a bit sneered at, not aggressively more like "ech, she touching that thing?!"
love love love! photo taken by Scotty Soul
Washed hands again and after store searching I got a cashew sugar patty (literally a ton of cashews sticking together through a maple like sugar base) and sweet potato bread, made up of rice flour, sugar, and purple sweet potato! So good~
blurry bread~ photo taken by VeganBeats
It's hot, I was sweaty, there was a good half of the trip left and my legs were sticking to the chair and the women next to me...Red Horse again, a litro. Energy fuel and drunky jams...game on~
Red Horse, Scotty Seoul, and bread~ photo taken by VeganBeats
The cashew patty was delicious, is had a smokiness to it and although sweet, was generously filled hugged in cashews, and the bread, was beyond expectations! It was light, naturally sweet, had a strong sweet potato flavor, and it just hit the spot! Red Horse, you can't go wrong...went down nice, and the two hour trip was somehow more fun! (sloppy slurry beats~)

Finally we arrived....all the shit was worth it....

Ahh I may have lost original focus....I love jeepneys~

annnnd ~  More to come...aiiiii

Bread Experiments: More Itchn'n'the'kitch~

I can do complications, I can do ornate, I can work with lots of ingredients...but when it comes to the minimals, the bare minerals of things, I seem to lose all face. When I was first playing with ingredients and food, meal creating...I could do casseroles, ratatouille, samosas, etc...ask me to make a grilled cheese (pre-vegan days) and I was a mess. I burnt things, didn't melt cheese, ruined pans...I can't work with simple. Give me trouble, hard work, intricate demands and I'm the lady.
I've been trying to work with the simplest, and most difficult of creations~ bread. It requires four ingredients and provides the greatest of challenges. Here's my adventures with bread...(gluten free bread is no problem, over 15 ingredients....aiiii)
before I burnt the cheese~ (photo taken by VeganBeats)
First challenge was 'za...A week or two ago I had the brilliant idea to make a za for one kick-Ass Seoul, one to thank them for being extra Vegan tolerant and to give myself a challenge! I threw on loads of ingredients, peppers, chunky tomatoes, mushrooms, leeks, onions, kale, spinach, garlic scapes, and cheese. The result was a burnt crunchy cheesy pizza that... "it doesn't look tasty, but it's good."

But the crust...what about the crust?!

"Perfect..."

Next challenge was ciabatta and cinnamon raisin bread. I can easily jump on the subway for 20 minutes and find some ciabatta...but Phbbbt to that...let's see what I can do ehh?!
I grew exhausted and honestly didn't measure (I'm a bit eye-measure-cocky) and just went for it...I never really measure for cakes...or cookies...or anything else really and I haven't ever gotten negative reviews. Meh...thanks Mamabeats!
Anyways...what came out in ciabatta terms was a crusty-topped and fluffy bread, not really airy like a legitimate ciabatta but enough to please these taste buds!
Lotta Ciabatta~ (photo taken by VeganBeats)
The cinnamon raisin bread was...ridiculous! I read some recipes that called for half cups of raisins, or "scant cinamon" and well...I don't follow rules. Half a cup...HALF...serious? If the bread is has some sort of title presenting it...I want minimum flour, "scant" carb and high whatever the hell it's nicknamed. I was generous with the cinnamon (think cinnamon challenge amount), used organic agave, and fistfuls of raisins...result~ better than all those other breads.
gooey in all the right places~ (photo taken by VeganBeats)
And being the VeganBeatin snob I am...I ignored using one type of flour~ 4 SUCKASSSS

Here's my base "recipe" I did for all these kids:~

What you need:
  1. 1.75 c warm water (I just get the tap as hot as it'll go...)
  2. 1 T olive oil
  3. 1.5 t green tea salt
  4. 1.5 t dry yeast
  5. 1.5 t organic coconut sugar
  6. 3 c whole wheat flour
  7. 1 c unbleached wheat flour
  8. 0.5 c flour blend of quinoa/rice/almond (why...because I want to)
What to do:
  1. Pour the hot water into a big metal bowl (it's got to stay heated!)
  2. Using a big spoon, mix the sugar, salt, oil, and yeast and stir it until it's combined...needn't be concerned if it's not all dissolved.
  3. Add the flours and mix until everything looks pretty blended!
  4. Cover the bowl with somethng (I chose aluminum foil!) and let it rise for 2 hours
  5. Are you angry? Punch that dough!!! Add a bit more flour is it's too sticky!!
  6. Let it rise again...until you're no longer patient and bake at 350 degrees F (180 degrees C) for a half hour!
FOR Ciabatta...get angry and punch it...

FOR Cinnamon Raisin Bread~~
What you need:
  1. cinnamon
  2. sugar or agave
  3. raisins...and anything else you're craving
What to do:
  1. How much do you want of either...go for it.
  2. Roll out the dough flat..sprinkle that ish in...
  3. bake that all the same way as step 6 for above...
  4. nom nom nom
Experiment Conclusions:
     I've got learning to do...novice okay~~

The Baker's Table: revisiting

Lately my weekends have been chalk full of evening adventures, drink "tastings", music inspirations, and bed snuggles. I've slept in, enjoyed the comfort of my room, blankets, and AC~ I've been doing the weekend thing. I work a lot and when my days are free of any income-dependent activities...veganbeats is mellow~
A couple Sundays ago I got out and bathed in the sun and got all sorts of productive and active. I started off with some giant iced coffee, legs cracking, and beats blaring and met with a beautiful Seoul over at The Baker's Table in Noksapyeong. Usually coffee does me more than well in terms of post-Saturday adventures, but the idea of hummus and a fresh Summer Salad was beyond deniable.
pita and hummus~ (photo taken by VeganBeats)
Scrolling over the menu, Melissa and I chose the tomato and mango salad; it's naturally vegan! There's no cheese or honey or secret animal bits, just mangoes, tomatoes, sunflower seeds, balsamic dressing, a couple toasted slices of bread! Everything looked beautiful, bright, and sunny and tasted perfect. Sweetness from the mangoes paired well with the slight sweet acidity of the tomato, and the crunch of the sunflowers added great texture to the firm and soft textures of the fruits. The balsamic was great, as it always is, because honestly~ you can't go wrong with balsamic. Some people choose chocolate as an ideal death, but I'm all about the balsamic!! Drown me in that!

We also got some chilled white wine to bubble up a great date, day, and meal...while her kids (Bailey and Sadie) wound themselves around us, and we both got kisses of tipsy, the sun bore down on us and I know I was sweating. We both were game for adventure and trucked to Namsan to frolic around some dirt paths!
between the trees~ (photo taken by VeganBeats)
When I'm in the woods and surrounded by nature I get lost in the wonders of the world...I realize and get connected with what is around me, what truly grants my body life... I miss trees, forests, woods, animals...I wish I was in  Fern Gully!!
After playing in dirt for a while, Melissa and I ventured to a secret bar with a Beautiful view and got some mojitos while we watched the sun set over Seoul. I got a Shirley Temple (I found one!) and as the temperature cooled, the mint sat on our lips...I fell a little bit more in love with Korea. I know I sometimes spit some anger it's way, but at the end of the day, I am grateful.

Crunchy bagels...

While flying over, "the first thing I'll eat" scrolled through my mind as often as my neighbor shifted next to me. I thought of hummus, celery, dinosaur kale, pink lady apples, organic freshly ground almond butter...the first thing I had was a freshly foraged meal my mom concocted. My first day, that surprising evening, my mom prepared a completely vegan meal! Coincidence eh!
That day she foraged and went mushroom hunting and with some herbs from her garden she made a mushy dish packed with both texture and flavor. She also made a multi-veggie and nutty barley fry (huzzuh Mom!) and she also made fresh kimchi. So my first meal was a foraged and local one...hell yea mom. Bad news...this vegan here has not a picture to tease you with. Maybe my brother snuck one....anyways here is something else I've eaten.
I don't eat a lot of bread, I really barely ever do but with it's availability in the states...I nommed on a whole-wheat bagel (or two).
Bagel half numero uno was organic smooth peanut butter (with cinnamon swirled in), organic local grape and raspberry jam, and oven roasted tamari sunflower seeds! (yumm!)
photo taken by VeganBeats
Bagel half numero dos was homemade garlic and chive hummus, sliced avocado, and organic romaine lettuce. I dribbled on some sriracha and munched gleefully!

Sorae Villiage Christmas Market

Last weekend I met up with some wonderful friends (I'm loving this trend) and we trucked it over to the Christmas market that was happening in Sorae villiage. Sorae villiage is the French district in Seoul and is honestly a strip loaded with cafes, bakeries, French cuisine, and is thoroughly dusted with the French language. It's super cute, I recommend just checking the area out!
The market was quaint, there were lots of tables and foodie items all over the place. Sadly there wasn't much on the Vegan front (Aliensdayout, let's collaborate)! They had everything from wine (^^*), breads, cakes, bindaeddeok (빈대떡), crepes, hot chocolate...ahhh I'll just lay the porn on you~

The hot chocolate was made with dark chocolate chips and...butter. ugh~

There was a table LOADED with beautifully dressed pastries and warm crusty breads but...vegan lacks and wallet demanding...my eyes can gorge though right? (I mean, what's porn for!)
